Barenjager Apple Sauce


This very grown up chunky applesauce is almost like pie filling, and would be crazy good with vanilla ice cream.

Cut up 5 organic local granny smith apples into tiny cubes.
Cook in a heavy pot with 1 1/2 t of cinnamon, 1/2 C Apple Juice and 1 1/2 T of Barenjager Honey Liqueur, mashing and stirring occasionally until the sauce cooks down. The longer you cook it the better it becomes. Approximately 45 minutes.

Barenjager is a german honey-flavored liqueur made from honey, vodka and a secret blend of natural ingredients. It was developed in Eastern Prussia, Germany in the late 15 century. The name "Barenjager" translated in German means "bear hunter".

this sounds awesome.
we've been using barenjager/soy sauce when we bbq as a wash. jesse boy made some pork ribs last night. he does this intense white pepper/brown sugar/cumin rub and cooks it off the coals so it kind of smokes it. then he puts on the barenjager/soy wash and cooks it longer. the wash ends up making an almost candy-coating that is crispy and fantastic.

i'm gonna make your applesauce to go w/ it next time.
